In a food processor place the egg yolks, salt and pepper. Process until they are slightly thick.

Very slowly add the melted boiling butter,1tablespoon at a time.
Add the lemon juice.
Cut the heart of an iceberg lettuce into 6.
Drizzle hollandaise over the lettuce wedges.

Scatter with diced ham and parsley before serving.
