Hot Smoked Salmon with Aioli, New Potatoes and Rocket

In a food processor blend egg yolks, lemon juice and seasoning.

Slowly drizzle in the rice bran oil and process until thick.
Pulse in the roasted garlic flesh.
If too thick add a little water.

In a large bowl toss the cooked potatoes with enough aioli to coat them.
Place potatoes on 4 serving plates, Pile flaked smoked salmon on top.
Toss rocket or mesclin with extra virgin olive oil and mound on top of the smoked salmon.
Season with freshly cracked black pepper and sea salt crystals.

Serve immediately.
