Warm the bagels in a hot oven until starting to crisp. Slice in half.
Heat half the butter in a frying pan and sauté the leeks until soft and tender.
Season to taste and transfer to a bowl.
In a bowl whisk the eggs with the cream and salt.
Melt the butter in a saucepan. Add the egg mixture.
As the egg sets push toward centre. Continue until egg is just set.
Season to taste.
Break the salmon into pieces.
Serve bagels with warmed buttered leeks, hot smoked salmon and topped with scrambled eggs.
